It's RASPBERRY Time!!

Look what I did this afternoon!!
5 1/2 pounds!!


Are you drooling yet!

And they're just starting to turn!

Now I have to make jam!

Here is one of my favorite recipes. Normally I use red raspberries, but either can be used.
Raspberry Delight

2 1/4 cups flour
2 T sugar
3/4 cup butter
Filling
1 8oz pkg cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1/4 tsp salt
2 cups whipped topping
Topping
1 6oz pkg raspberry jello
2 cups boiling water
2 10oz pkgs sweetened frozen raspberries
*I just substitute fresh unsweetened*

In a bowl, combine flour and sugar; blend in butter with a wooden spoon until smooth. Press into ungreased 9x13 baking pan. Bake at 300* for 20-25 minutes or until set. (crust will not brown). Cool
In a mixing bowl, beat cream cheese, powdered sugar, vanilla and salt until smooth. Fold in whipped topping. Spread over cooled crust.
For topping, dissove jello in boiling water; stir in raspberries. Chill for 20 minutes or until mixture begins to thicken. Spoon over filling.
Refrigerate until set.
Cut into squares; garnish with more whipped topping.

Enjoy!!
