We were late taking our walk today because Amber had to help out in the Kindergarten class. It was chilly today, so we'd planned on stopping at the local coffee shop for a cuppa java...mmmmm. Nothing unusual you're saying, but read on....
She asked if my brother had sent me the 'chocolate cake' email. Now, my brother sends me emails almost daily.........but, NO, he hadn't sent ME this one. , so she told me about it. Hmmmmmm, interesting..........."forward it to me", I told her.
Are you curious? This was so FUN!! Chocolate Cake IN A Mug...made in the microwave! I made two! One in my paper cup that I'd just gotten from the coffee shop using the fun class from Cornish Heritage Farms . And one in a regular mug. I'm thinking if you had a tall mug, it might help to keep the cake from leaning....(wait till you see the picture!)
Mix it up right in the mug!
Too fun, right?! Ok...here's what it looked like cooking....

5 MINUTE CHOCOLATE MUG CAKE
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
a small splash of vanilla extract
1 large coffee mug
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well. Add the chocolate chips (if using)
and vanilla extract, and mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.*
The cake will rise over the top of the mug, but don't be alarmed!
Allow to cool a little, and tip out onto a plate if desired.
EAT! (this can serve 2 if you want to feel slightly more virtuous).
And why is this the most dangerous cake recipe in the world?
Because now we are all only 5 minutes away from chocolate cake at any time
of the day or night!
*you might have to adjust time according to your microwave
**I did use cooking spray in the mug (didn't think of it for the paper cup!)...it worked fine.

I tried this last night! It was sooo good!!! Sooo rich (with the chips!)!!! I used a large sized coffee mug and it was the perfect size - no spillover. The only problem was that it stuck to the mug badly. I don't think you could use a cooking spray since you stir it in the mug, so next time I think I'll use a disposable cup. Thanks again for the tip!
