Salsa Time!

Yes! The tomatoes are ripe!! I thought I'd share how I make my salsa. Don't ask for measurements because I just throw it together, taste as I go along....when it suits my fancy, it's done Roma tomatoes are the best because they are a meaty tomato so your salsa doesn't end up with a lot of juice. Fresh cilantro (see-lan-{as in lalala}tro)... for me the more the better, but some people in this household don't share my affection! Onion and garlic...mmmmm...and jalapeƱos (please don't say ja-la-PEEn-os!)....

Now for the observant...no, that's NOT a jalapeƱo in the colandar. Lloyd forgot to plant them this year...how did he expect me to make salsa?? Yeah, good question! My daughter, Jennifer, planted these 'mild salsa peppers' and let me tell you..........they are ! Actually I started out with the green one and had to add some of a red one, that's where the heat comes from...

How do you chop your veggies? I bought this gadget that is wonderful for chopping! It's called a Vidalia Chop Wizard. It has 3 different blades, I like to use the smallest for my peppers and onions and the larger one for tomatoes.


Ok, so I started with 19 tomatoes, odd number I know, but that's what was ripe! It took me 7 minutes to chop the pepper, onion and tomatoes!!

Dump it all in a bowl and add salt and pepper to taste, chop cilantro (I use kitchen scissors), a pinch of oregano and the juice of a lime.

Back when my brother had his restaurant in San Diego, he had a Mexican cook....and could he cook!! When he made his salsa he always added a little oil, just a couple tablespoons, it helps it last longer. So I now add oil too!

Now for the taste test! Too hot? Add more tomatoes if you have them. More cilantro?....why of course add more!! *wink*

I cooked a pot of beans this morning, I have tortillas....no I didn't make them...it's been YEARS...maybe one of these days I'll shock the family and make a batch...I'll make some rice....Mmmmm, it's going to be a good dinner tonight!

Your salsa looks amazing! I can't wait to trek out to my garden ( and then the market for garlic and cilantro ) so we can have this with tacos tonight. I just use the handy-dandy kitchen knives and shears to prep vegetables and herbs. TFS!

Well that settles it, I HAVE to have some salsa sometime today...I would love it if it were yours, but I will have to settle on someone elses or mine. I make some pretty mean salsa too. We'll have to have a taste off sometime:)
