Challenge Chicks in the Kitchen!

This is one interesting challenge this week....thanks to Kim... Food Color Challenge!
Ooook.... so what kind of food do you think of when you see certain colors? For me, the first thing that popped into my mind was my favorite food.........Mexican!
copiedI could eat Mexican food everyday and not get tired of it (well, I think I could...lol...not my recipe mind you, my backside would be 2 axehandles wide!lol)

My paternal grandmother was from Spain and my paternal grandfather from Mexico, so we ate Mexican food quite often. My Irish mother made the best tortillas, tamales, frijoles and Spanish rice!! lol

I chose to take the colors from the Mexican flag red, green, and white. Spanish Script is stamped on the Deja View DP. Watermelon and Shabby Shutters inked up the Silhouette Blooms II.

My
Grungeboard arrived recently, so I played with that too. First smooshing it into Stazon Cotton White then coloring with Copics. To define the debossing I used a white paint marker. The center of the butterfly is glued down while the upper wings are on foam dimensionals.

And now for my recipe. I love to go to a restaurant and get a really good Chile Relleno, you can make them at home, but they're more work than I want to spend fixing them...lol. This casserole tastes like the real thing without the fuss*wink*

Chile Relleno Casserole
2-7oz cans whole green chiles*
1-3oz can whole green chiles*
Open chiles flat and line a 9x13 pan with one layer.
Slice 1 pound Monterey Jack cheese and lay on top of chiles.
Place another layer of chiles on cheese.
Slice 1 pound Sharp Cheddar cheese and lay on top of chiles.

Separate 4 eggs.
To the yolks add: 1 can evaporated milk, 3 T flour, salt & pepper. Beat till until blended.
Beat whites stiff and fold into yolks.
Beat until foamy.
Pour over chile layers, cover with foil and bake 50 min. at 325.
Remove foil and bake 10 min. more.
Mix 1 cup of salsa and 1 cup of tomato sauce together, pour over casserole and bake 30 min. longer

*sometimes the 'whole chiles' are hard to find, just substitute chopped.
